It is the ultimate blend of Coast and Country that has landed The Waterline Restaurant the Best Beef Signature Dish award at the Beef 2012 restaurant awards announced today.
Eye fillet of Banana Station beef, barramundi brandade, enoki tempura, edamame with a bordelaise sauce, combines the best local beef and line caught barramundi in the contemporary style the Executive Chef, Matt Smith has built his reputation on.
“This dish typifies our style of cuisine,” says Matt, “we take the best produce available, and prepare it with a blend of traditional and avant-garde techniques to maintain the inherent flavour of the ingredients. The flavours are a unique blend of Asian and Australian cuisine that has made The Waterline one of the most highly awarded restaurants in the region.”
The Waterline Restaurant at Keppel Bay Marina is owned by the Wilson Family who operate the Banana Station and Barranga Grazing Beef Cattle Enterprises in Central Queensland. The Waterline exclusively serves their own MSA grass fed beef processed at Fitzroy by JBS Australia.
Banana Station was the most successful exhibitor at Beef 2009 Australian Beef Cattle Championships and won first and second prize in the heavy trade and export carcases at Beef 2009 National Beef Carcase Championships judgedat 21 Australian abbotoirs, this was a repeat of the Beef 2006 successes.
The Beef 2012 prime cattle and carcase awards will be announced on 7 & 8 May at the Beef 2012 event.
The Waterline Restaurant also received a Highly Commended for their Fillet of Banana station beef, baby carrots, garlic mouselline, salardaise wafer, port and eschalot reduction and the Silver Award for the Teriyaki glazed beef pattie, wasabi leaves, bok choy, roast eschalot aioli and tempura onion rings on house baked bread roll.
